Today I am sharing very famous Indian sweet for Diwali festival, it is Besan ladoo. It very yummy and widely prepared all over India. So try it. Do remember to like and share this recipe. Ingredients for 1 st step . 2 cup chick pea flour/gram flour (Always use little coarse) . 3/4 Cup ghee (as requirement) . 1 tsp green cardamom powder . pinch of nutmeg powder . dry fruit slices (For garnishing) for 2nd step (to make Bura sugar) . 1 cup sugar . 1/2 cup water . 1 tsp ghee Method: . Take chick pea flour in a pan having thick bottom. . first add half amount of ghee in it and saute it on low flame. . Step by step add ghee as per requirement and saute chick pea flour continuously till get roasted properly. . When get roasted properly and color turns slightly light brown transfer it in flat plate. .Allow to cool this mixture completely for 1 - 2 hour . Mean time prepare a bura sugar means dried sugar syrup. . For that take sugar in a pan , add water and stir continuously on high flame till sugar gets melts. . When suger melts properly keep stirring,till sugar syrup gets thiker than 2 string consistency. . Then add 1 tsp ghee and mix it. . Nice bubbly textured ,thick white sugar syrup will form. . Then switch off flame and transfer the pan on kitchen platform. . Pan and sugar syrup is too hot now keep continuously stirring it. . While mixing crush the lumps formed . . As syrup starts cooling it turns dry powder. . If there are hard lumps formed duing this process grind this lumps for fine powder. . Sieve this dry powder for a fine sugar powder. . Fine and crumbly Bura sugar is ready. . When roasted chick pea flour gets cool properly, add nutmeg powder,and cardamom powder in it and mix well. . Then add 1 cup bura sugar (as per tatse) . Mix it properly. . Rub this mixture in both palms. for soft ladoos. . Bind ladoo and garnish it with dry fruit slices. . Besan ladoo are ready. . Store it in dry airtight container for 20-25 days. Tip : . You can use redymade bura sugar to save time. Thanks..
