Today I am sharing our traditional perfect chakli bhajni recipe for crispy chakli. crispyness and taste of chakli is depends on the measurements and recipe of bhajni flour, So try this and carefully listen all tips given in video. Your precious comments are highly appreciated. 1)Chakli Bhajni flour Ingredients: Always measure all ingredients with same cup / bowl as per requirement . 3 cup rice (thick/jada) . 1 cup green gram (Moong dal) . 1 cup black gram (Urad dal) . 1 cup bengal gram (chana dal) . 1 cup thick flatten rice (Jada poha) . 1/2 cup dry coriander seeds (dhania) . 1/4 cup cumin seeds (jeera) Method: .Wash rice with water and transfer it in strainer then allow to drain water for 10-15 minutes. . Meantime dry roast poha/flatten rice in a thick pan till becomes crispy on low flame. . Then transfer it in flat plate. . Saute dry coriander seeds and cumin seeds separately on low flame for 1 minute, on low flame just to remove it's moisture. (Don't roast excess). .Then transfer it in roasted poha . .Now the washed rice gets drain properly ,take it in a pan and dry roast it on low flame. . Meantime wash next ingredient chana dal and allow to drain it for 12-15 minutes. . When rice gets properly roasted,becomes crispy and slightly change the color transfer it in poha and spices mixture. . Now the washed chana dal gets drained properly,take it in a pan and dry roast it on low flame. . Meantime wash next ingredient bkack gram/urad dal and allow to drain water for 12-15 minutes . When bengal gram/chana dal gets properly roasted,becomes crispy and slightly change the color transfer it in rice poha and spices mixture. . Repeat same process for urad dal and moong dal also. . means each time wash only 1 ingredient and allow to drain it till previous ingredients get roasted. .When all ingredients gets properly roasted mix it in a flat plate. . Allow to cool all roasted ingredients at room tepmerature. . Then grind it for a fine flour. in a flour mill. . Sieve the flour properly. . Chakli bhajni is ready. . Store it in dry airtight container for 45 days outside and for 90-95 days in fridge, and prepare chakli any time you want. Tips: . Always wash rice,moong dal, urad dal and chana dal. to remove preservetives. . Always roast ingredients on low flame till becomes crispy and slightly change in color . 2)Chakli Recipe Ingredients: . 3 cup chakli bhajni flour (300 gms) . 1 tbsp sesame . 1/2 tbsp salt (as per taste) . 1/2 tbsp red chilly powder (as per tatse) . 1/2 tsp carom seeds . 1/2 tsp turmeric powder . 1/2 tsp asafoetida (Hing) . 2 & 1/2 tbsp hot oil . 1 cup boiled hot water . Oil for deep frying Method: . Take bhajni flour in a big bowl. . Add salt,red chilly powder,turmeric powder carom seeds,sesame seeds and asafoetida and mix well. . Add hot oil in it and mix it properly. .The mixture will be nice crumbly. . Then add boiled hot water and mix well. . Cover this hot mixture with lid and allow to rest it for 10-15 minutes. . After 10-15 minutes again mix it properly. . Then add approximately 1 cup normal water step by step in this mixture and knead a little hard dough. . Then take a chakli maker. . wet palm with water and take some portion of dough and fill it in chakli maker . Close the chakli maker and prepare some chaklies on flat plate. . Heat oil in a flat pan on medium flame. . Transfer chakli in hot oil and deep fry it on medium flame from both sides . Don't disturb chakli immediately after adding in oil, it will break. . After few minute,turn the side and allow to fry till turns to golden brown and becomes crispy . . When becomes crispy allow to drain oil and transfer chakli on kitchen paper. . Bhajni Chakli is ready. . When cool at room temperature, Store in dry airtight container. Tip: . Always use same cup to measure ingredients . If chakli get breaks during making it means dough gets dry then again knead it by adding little water. .
