Knead for two minutes, seal and refrigerate overnight. It will automatically form a skin the next day. ② Make the butter dough by mixing together sifted low-gluten flour and unsalted butter into a dough. Set aside. ③ Wrap the peeled salted egg yolks with red bean paste, aiming for a total weight of 40g per piece. Adjust the amount of red bean paste according to the weight of the egg yolks. Refrigerate the wrapped fillings. ④ Take the refrigerated butter pastry and butter dough out of the fridge 30 minutes in advance. Knead the butter pastry until smooth, then roll it into a long strip and divide it into 12 equal portions. Divide the butter dough into 12 equal portions as well.
