One-Pot Kayak Camping Meals - Spicy Peanut Sweet Potato Stew

One pot meals while camping are ideal. Clean up is a breeze and if you don't want to share you can eat right out of the cookpot if you want to save another dish. Today I am sharing a one pot spicy African sweet potato stew that I have made many times in the past.No matter how tired I am after a tough day kayaking or being outdoors this sweet potato stew is fast and easy to whip up and will satisfy your every need. It sticks to the ribs even though it is just a pot of hot veggies! In this video I make enough for one and adjusted it accordingly. Below is the 4 servings version of thew stew. Again, I cannot say this enough that the more you prepare at home the faster the grub gets in you in camp. So that being said, at home peel and dice up the sweet potato. Blend the seasonings with the diced canned tomato and even tear up the kale. Place the ingredients in a ZipLoc bag and label it to avoid confusion later. You will need: 2 tbsp oil (I use grapeseed oil because it has a very high heat tolerance) 2-3 cloves garlic, minced 1 medium sweet potato, diced into 1/4 inch cubes 1 small onion, medium diced 2 cups water 8oz can of diced tomatoes 1 cup canned lentils 1 tsp chili powder 1 tsp chili flakes 1 small Serrano pepper, minced (seeded if you want to tone down the heat) 1 cup torn kale 1/4 cup peanut butter 1 tsp salt 1/4 tsp ground pepper Cooking instructions: Heat oil in large pot and saute onion, garlic and Serrano pepper until fragrant and onion has started to brown. Add tomato/lentils and seasoning, then water and sweet potato. Stir in peanut butter and turn down heat to simmer for about 10 minutes or until potato has become tender. Remove from heat and stir in kale. Cover and allow the greens to wilt. Enjoy!
