Its Football Season, Chili it is!

We take basic meals and show both ways to explain how easy it can be to please everyone in your family without eating out all the time. Joe’s chili 1.5 lbs ground beef, cooked or cook it after your onions have cooked for about 5 minutes 1.5 cups diced onions 4 Tbsp chili powder 1-2 tsp cayenne pepper, if desired 2 tsp smoked paprika 1 28 oz can crushed tomatoes 1 6 oz can tomato paste 2 cups water Heat a large pot on medium heat then add onions. Stir frequently and let them sweat for about 3 minutes. If the ground beef isn’t cooked, then add it now. And cook till done. Add the spices and let them “bloom” for about 2 minutes to get the maximum flavor. Add the tomatoes, paste and water. Stir to combine. Once it comes back up to a low boil, turn to low and cover. Let it simmer for at least 90 min stirring every 20 minutes or so. Let it rest for about 20 minutes before serving. Joe’s chili made veggie style 1.5 cups diced onions 12 oz frozen bag of riced cauliflower, thawed 1 cup diced carrots 1 cup diced green pepper 4 Tbsp taco seasoning 1 28 oz can crushed tomatoes 1 6 oz can tomato paste 2 cups water Heat a large pot on medium heat then add onions. Stir frequently and let them sweat for about 3 minutes. Add the carrots, green pepper and cauliflower and let them cook for about 5 minutes stirring frequently. Add the spices and let them “bloom” for about 2 minutes to get the maximum flavor. Add the tomatoes, paste and water. Stir to combine. Once it comes back up to a low boil, turn to low and cover. Let it simmer for at least 90 min stirring every 20 minutes or so. Let it rest for about 20 minutes before serving. Notes and tips: 1. Can easily be made the day before then just heated through when ready to serve. 2. Other ways to use the chili…on a potato, nachos, fries, with noodles to make chili mac, hot dog, walking taco with Fritos, on rice. 3. Add more heat with hot sauce, pickled jalapenos, or red chili flakes.
