Here, Lulu makes a standard Italian egg pasta dough, then rolls it to less than 1 mm using a rolling pin and cuts it into tagliatelle pasta. While you can use a pasta machine to stretch the egg pasta dough, here Lulu uses a large rolling pin to stretch the pasta dough to less than 1mm thick. Traditionally, fresh tagliatelle pasta needs to be between .6 mm and .8 mm thick. The width of each tagliatelle pasta noodle should be about 7 mm. After cooked, the fresh tagliatelle noodles will swell to about 8 mm wide. Fresh tagliatelle pasta needs to cook only about a minute in boiling water. Handmade tagliatelle pasta dried for one day will need about 1 minute and 30 seconds. This fresh homemade pasta freezes well. To freeze, divide into 4 equal portions on a flat surface covered with semolina flour. Place uncovered in the freezer for a few hours. When the pasta noodles are frozen, cover with plastic.
