Chinoti Biryani & Chinoti Kheer | Masala Morning | Shireen Anwar | 31 Aug 2023 | MasalaTv @MasalaTVRecipes CHINOTI KHEER WRITTEN RECIPE : Ingredients : Milk 1 ½ kg Rice soaked for 4 hours ½ cup Khoya ½ cup Green cardamom grinded 1 tsp Sugar ¾ cup Screw pine 1 tsp Almonds and pistachio sliced as required Silver paper as required METHOD : Boil milk, add in soaked rice, cook stirring for 15 mins, add in khoya, and cook till rice tender, add green cardamom, and kewra water, cool, sprinkle with almonds, pistachio, and garnish with silver paper. CHINOTI BIRYANI WRITTEN RECIPE : Ingredients : Chicken 1 kg Rice 750 gm Oil ¾ cup Brown onion crushed ½ cup Chili powder 1 tbsp Yogurt 1 cup Whole green chilies 8 – 10 Cloves 6 Green cardamoms 6 Green cardamom grinded ½ tsp Nutmeg grinded ¼ tsp Mace grinded ¼ tsp Dried plumps 12 Water 2 cups Water 2 cups Salt 1 tsp Allspice powder 1 ½ tsp Screw pine 1 tsp METHOD FOR RICE : Boil water with salt, cook rice till half done, and strain. METHOD Heat oil, add in brown onion, yogurt, chicken, cloves, green cardamom, green chilies, chili powder, and salt, cook the chicken covered for 20 mins with 1 cup water, when the water dries, fry chicken, add aalu Bukhara, grinded cardamom, mace, and nutmeg powder, cook on medium flame.
