BROCCOLI & CHICKEN SKILLET: 3-4 TBS olive oil 1/2 large onion, diced 1lb boneless skinless chicken 1-2 cloves of garlic minced Salt/pepper 1 cup uncooked long grain rice 3-1/2 to 4 cups chicken broth or stock 2 to 2-1/2 cups broccoli florets cut into bite sized pieces 2 cups grated cheddar cheese In a large pan heat on low, some olive oil & then add your onions & garlic saute for a few minutes until they start to soften. Once softened, add your chicken to the pan & turn the heat up to medium. If you're using left over chicken, your just re-heating the chicken at this point. But if your chicken is uncooked, season the chicken with salt/pepper & brown the chicken pieces. Push chicken mixture to one side of the pan & drizzle the other side with additional olive oil. Add the uncooked rice & saute for a couple of minutes. Add chicken broth to the pan & mix well. Bring to a boil. Lower the heat to a simmer, cover & cook for 12 minutes. Add broccoli florets, & season with salt/pepper, mix well. Re-cover for an additional 8 minutes. Remove from heat, stir in 1 cup of the cheddar cheese, mix well. Sprinkle remaining cheese on top & cover for two minutes. BLUEBERRY BISCUITS: 2 cups all-purpose flour ½ cup granulated sugar 1 TBS baking powder 1 tsp salt 1/2 cup butter (chilled) 1 cup milk or buttermilk ½ tsp vanilla extract ¾ cup frozen blueberries, (keep in the freezer until ready to use) 1 tsp flour (for coating blueberries) 1-2 tsp MILK (for brushing tops of cut biscuits) 1-2 TBS melted butter (for brushing tops of cooked biscuits) Preheat oven to 450F. Lightly grease the bottom of a dark 9-inch round cake pan with shortening.In large bowl, whisk together flour, sugar,  baking powder, and salt.Grate the frozen butter into the flour mixture, tossing occasionally so that the butter pieces are coated in the flour.Mix vanilla extract into the milk and pour it into the dry ingredients. Using a spatula, stir until a dough forms.Sprinkle about 1-2 tablespoons of flour on a flat surface and pour the dough out.Knead the dough into a soft ball. Flatten and fold the dough 2-3 times,(this will create layers in the finished biscuit) adding more flour if needed.Pat the dough out into a 1-inch thick rectangle.Add frozen blueberries to a bowl and toss with 1 tsp of flour.Press the frozen blueberries into the dough.Carefully fold the dough in half and press back out. Be sure to keep your hands and work surface well-floured. If berries fall out just tuck them back in.Fold and press out the dough again 2 more times. Blueberries will fall out and this may get messy. Just keep tucking in blueberries as they fall out, working as quickly as possible to keep the blueberries from thawing.Pat the dough out one final time into a 1-inch thick rectangle.Dip biscuit cutter into flour and cut out biscuits.Place the biscuits on the prepared pan with sides touching.Brush the tops lightly and evenly with milk. Bake for 15-20 minutes on the middle rack.Remove from oven and brush biscuits generously with melted butter. GLAZE: 1 cup powdered sugar 2 tsp milk (may need more) 1 TBS butter, melted ¼ tsp vanilla extract Pinch of saltCombine powdered sugar, melted butter, and milk. Add more milk if you prefer a thinner glaze.Stir in vanilla extract and a pinch of salt.Drizzle glaze over the hot biscuits & enjoy! 🎼 Music by Epidemic Sound!
