Kettle & Fire Bone Broth: https://glnk.io/v153/jessicajspiers Code for 20% off: JESSICAJSPIERS Spring Time Soup INGREDIENTS 2 tbsp avocado oil or grass-fed butter 1 medium yellow onion, finely chopped 3 cloves of garlic, minced 2.5 tbsp fresh thyme leaves 1 bay leaf 1 cup asparagus 1 medium green zucchini, sliced into half-moons about 1/2 inch thick 1 medium yellow zucchini, sliced into half-moons about 1/2 inch thick 8 cups bone broth Salt and freshly ground black pepper 2 cups cooked chickpeas 1 tablespoon fresh lemon juice 2 teaspoons grated lemon zest Pinch of crushed red pepper flakes ASSEMBLE In a large pot over medium heat, melt the butter. Add the onion and asparagus, and cook, stirring occasionally, for about 5 minutes. Add garlic, thyme, and bay leaf. Cook for about 1 minute longer. Reduce the heat to medium-high and cook until most of the liquid evaporates. Add the zucchini, stock, salt, and pepper. Bring the liquid to a boil again. Reduce the heat to medium-low and cook until the zucchini is tender about 8 minutes. Add the chickpeas and kale. Continue to cook until the kale whilst down a bit. Season with lemon juice, lemon zest, red pepper flakes, and additional salt and pepper. Chocolate Chip Banana Bread INGREDIENTS 3 very ripe bananas, mashed 2 eggs, at room temperature (very important to be at room temp) ⅓ cup pure maple syrup (do not use honey) ½ cup plain greek yogurt 1 teaspoon vanilla extract 1 cup brown rice flour ¾ cup tigernut flour 1 tsp baking soda ½ tsp cinnamon ¼ tsp salt ⅓ cup butter ½ cup chocolate chips, dairy-free ASSEMBLE Preheat the oven to 350 degrees. Line an 8 1/2 x 4 1/2 inch pan with parchment paper and grease the inside of the pan to prevent sticking. In a food processor mix the mashed banana, eggs, maple syrup, greek yogurt, and vanilla extract in a bowl until well combined. In a large bowl, whisk together the dry ingredients, flour, baking soda, cinnamon, and salt. Add dry ingredients to wet ingredients and mix until just combined. Do not overmix! Next, mix in the melted and cooled butter (or coconut oil). At this point, you can fold in the chocolate chips. Add banana bread batter into the prepared pan. Optional but not required: split a banana down the middle vertically then add on top of the batter or just add banana slices on top, side by side. Bake for 50-60 minutes or until a tester inserted into the middle comes out clean or with just a few crumbs attached. Allow bread to cool in the pan for 10 minutes, then remove and transfer to a wire rack to finish cooling. Lemon Poppyseed Zucchini Donuts INGREDIENTS 1 ½ cups grated zucchini (1 medium size) 1 cup coconut sugar ½ cup olive oil (mild tasting) grated zest of a lemon 1 tsp vanilla extract 1 large egg ½ cup brown rice flour ½ cup tigernut flour ½ tsp salt ½ tsp baking powder ¼tsp baking soda 1 tsp poppy seeds ASSEMBLE Preheat the oven to 350 degrees. Grease a donut pan. After processing, give the zucchini a quick squeeze by hand over the sink to get rid of excess water. In a mixing bowl, whisk the sugar, olive oil, lemon zest, vanilla, and egg. Stir in the flour, salt, baking powder, and baking soda. Then stir in the poppy seeds and zucchini. Divide batter into donut pan.
