Add the tigernut flour, arrowroot four, baking powder, pumpkin pie spice, cinnamon, ginger, and salt to the bowl. In a food processor blend bananas, pumpkin puree, maple syrup, vanilla, and eggs. Combine wet and dry ingredients. Line a 9×9 square pan with parchment paper. Pour the batter into the pan and spread into the corners and edges in an even layer. Bake for 30 minutes. Allow the bars to cool for 10 minutes before removing from the pan and slicing them into 16 bars. 🍂 Apple Zucchini Donuts 🍂 INGREDIENTS Wet ingredients: 1 cup shredded zucchini 1 medium apple ¾ cup pumpkin puree 2 eggs ½ cup pure maple syrup 1 tsp vanilla extract ¼ cup coconut oil, melted and cooled 1 cup cassava flour ¾ cup tigernut flour (or sub with oat flour) 1 tsp baking soda 1 tsp cinnamon ½ tsp allspice ½ tsp ginger ¼ tsp nutmeg ¼ tsp Celtic salt 1/4 cup chocolate chips ASSEMBLE Preheat the oven to 350 degrees F. First, measure out 1 heaping cup of shredded zucchini, then place shredded zucchini in a paper towel, clean dish towel or cheesecloth and squeeze out ALL of the moisture/water. This is very important! Add shredded zucchini, apple, eggs, maple syrup and vanilla extract to a food processor. Next, add in the melted coconut oil and mix again until well combined. Add dry ingredients to the wet ingredients: flour, baking soda, cinnamon, allspice, ginger nutmeg, and salt. Mix together with a wooden spoon until well combined. Fold in chocolate chips. Spray donut pan with avocado oil. Bake for 30 minutes. 🍂 Pumpkin Waffles 🍂 INGREDIENTS 1½ cups coconut milk, at room temperature 1½ tbsp apple cider vinegar 2 cups loose-packed brown rice flour 2½ tsp baking powder 2 tbsp ground flaxseed meal 2 tsp cinnamon 1 tsp nutmeg ½ tsp ground ginger 1 tsp pumpkin pie spice ½ tsp sea salt ½ cup pumpkin puree ¾ cup carrots ¼ cup melted coconut oil 2 tablespoons maple syrup, plus more for serving 1 teaspoon pure vanilla extract ASSEMBLE Preheat your waffle iron. In a medium, mix the coconut milk and the apple cider vinegar. Set aside. In a large bowl, mix the flour, baking powder, flaxseed, cinnamon, nutmeg, pumpkin pie spice, and salt. In a blender or food processor add pumpkin puree, coconut oil, maple syrup and vanilla, and carrots. Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined. Including coconut milk and ACV. Scoop an appropriate amount of batter onto your waffle iron and cook until the edges are crisp (I cook mine for about 6-8 minutes).
