Butter Chicken Ingredients For Marination: Chicken (boneless) - 500 gm Salt - 1 tsp Pepper - 1/2 tsp Coriander Powder (Dhaniya) - 2 tsp Turmeric Powder (Haldi) - ½ tsp Red Chilli Powder - 1 tsp Garlic Powder - 1 tbsp Onion Powder - 1 tbsp Cumin Powder - ½ tsp Garam Masala - ½ tsp Hung Curd - 3 tbsp For the Butter Chicken Masala: Butter - 2 tbsp Oil - 1 tbsp Canned Peeled Tomatoes - 1 cup Tomato Purée (tetra-pack) - 2 tbsp Salt - to taste Turmeric Powder (Haldi) - ½ tsp Red Chilli Powder - 1 tsp Coriander Powder (Dhaniya) - 2 tsp Pepper Powder - 1/2 tsp Onion Powder - 1 tbsp Garlic Powder -1 tbsp Cumin Powder - 1/2 tsp Garam Masala - ½ tsp Sugar - 1 tbsp Kasuri Methi - 1 tsp Fresh Cream - 2 tbsp Fresh Coal - for smoking Method: -In a bowl, add the chicken followed by all the spices & the curd and rub the chicken well to coat each piece evenly. Set aside. -Heat a pan until hot, then add butter and oil. Add the marinated chicken on high heat to achieve good browning. -Once the chicken is nicely browned, lower the heat and cook until it's nearly done, tossing occasionally. Remove and set aside. (Do not discard the excess oil from the pan.) -In the same pan, add more butter followed by the peeled and blanched tomatoes. I’ve used canned tomatoes. You can blanch and peel tomatoes at home too. Now break them apart with the help of a master and add some tomato purée from the tetra-pack for a nice bright red colour & some thickness. Now add all the spices listed for the gravy. -Mix well and let it cook until the oil separates and the tomatoes are fully cooked. -Now add the sugar and mix well, then add the cooked chicken and combine everything. -Rub the kasuri methi between your palms and add it to the chicken. -Turn off the heat and stir in the fresh cream. -Heat a piece of coal, place it in a small steel bowl (katori), and add a little ghee on top. -Make space in the center of the pan and place the katori with the coal, then immediately cover the pan to let the smoke infuse for 1 minute to give you the authentic butter chicken taste. -Once done, remove the bowl of coal and mix the chicken again. -Serve the butter chicken with tandoori roti and enjoy! #butterchicken #recipe #chefamritaraichand Looking for some delicious recipes to try at home?
