Biscoff no bake cheesecake 60 g butter 180 g Lotus Biscoff cookies 100 g icing sugar 600 g cream cheese 300 g Biscoff (speculoos) spread 250 g heavy cream More Biscoff spread (approx. 100 g) and cookies for the top Lightly grease a 20 cm baking tin with butter. Crumble the biscoff cookies into crumbs, then add the melted butter and mix into a crumbly mixture. Transfer the cookie base to the tin and use your fingers to press it into a smooth layer on the bottom. Put the prepared base in the fridge for 10 minutes. Meanwhile, prepare the filling. Beat the cream cheese for about 3 minutes, then add the icing sugar and beat until smooth. Finally, add the Biscoff spread and beat until smooth again. In an another bowl, whip your whipping cream to the stiff peak, and gradually add it to the cream cheese mixture. Pour the prepared cream over the chilled cake and refrigerate for at least 4 hours or preferably overnight. Slightly heat a little of the Biscoff spread and pour it over the cheesecake. Spread lightly, add the crumbled biscuits and set in the fridge for another 30 minutes. Carefully transfer the set cheesecake to a plate and serve.
