Today we are teaching you how to make a DELICIOUS LOMO SALTADO! It's is out of this world!!! You are going to love this show! Let's cook! Ingredients: 1 3/4 lb (800 g) beef tenderloin (fillet), cut into 1/2 x 11/2-inch (1 x 4 -cm) strips 3 tablespoons vegetable oil, plus extra for deep-frying 14 oz (400 g) potatoes, cut into batons 1 red onion, sliced 2 yellow chiles, seeded, membrane removed, and sliced 2 cloves garlic, finely chopped 3 tablespoons white wine vinegar 4 tablespoons soy sauce 3 tablespoons oyster sauce 4 tomatoes, skinned, seeded, and sliced into half-moon crescents 1 scallion (spring onion), cut into 13/4-inch (4-cm) pieces 1 tablespoon chopped culantro or cilantro (coriander) leaves 2 cups (14 oz/400 g) Peruvian-Style Cooked White Rice (see p. 178), to serve salt and pepper Directions: Season the tenderloin (fillet) with salt and pepper set aside. Half-fill a large pan or deep-fryer with v oil and heat to 350°F/180°C, or until a piece of bread browns 1n 30 seconds Drop the potato batons carefully into the hot oil and cook until crispy and golden. Drain well on paper towel. Put 2 tablespoons of oil in a very hot wok, add the meat, and stir-fry in 4 batches until browned and medium done, about 2 minutes. Remove from the wok and set aside. Clean the wok with paper towels and return it to the heat, adding 1 tablespoon oil followed by the onion, yellow chiles, and garlic. Stir-fry for 30 seconds, then add the pre-cooked tenderloin strips, vinegar, soy sauce, and oyster sauce. Stir-fry the ingredients over high heat for another 30 seconds and finish by adding the tomatoes, scallion (spring onion), and chopped cilantro (coriander) leaves. Remove and adjust salt and pepper to taste Add the fries and serve with white rice. RICE: Ingredients: 1 cup of long grain rice 1 cup of water 1/2 tsp salt 1/2 tsp vegetable oil for cooking 1/2 tsp vegetable oil for finishing Note: this recipe is 100% scalable Directions: Measure rice (this recipe is scalable) Wash it under running water until water is almost clear Drain it Add rice and measured water a sauce pan with a lid Add salt and oil Cook at Med-high heat until most water is evaporated and you see little holes Set heat to low Cook covered for 15 minutes Turn off the heat Add the remaining oil and fluff with a fork Cover until ready to serve Let us know in the comments below what you think and how it came out, after you cooked it.
