Egg Curry - Malabar Mutta Roast

Kerala Mutta Roast or Egg Curry or Egg Masala is a simple and tasty dish which goes well with chappathis or porottas or appam. Please see the video and the description below. Ingredients: 5 Boiled and peeled eggs, slit. 1 ½ Big onion chopped. 3 diced tomatoes. 5-6 green chillies 1 tsp of ginger paste. 2-3 garlic pods crushed. 2 springs of curry leaf. 3 tbsp oil to fry the ingredients Dry powders: 1 tbsp red chilli powder, 2 tbsp coriander powder 1 tbsp of garam masala powder ½ tsp of turmeric powder. Salt to taste. For gravy ½ cup milk (or coconut milk) ¾ cups of water. Method. Heat oil in a pan. Fry onions, add tomatoes, chillies, curry leaves, ginger and garlic once onions start changing colour. Fry well for 3-5 minutes. Add the dry powders, fry on low flame for about 3 minutes. Add water and milk and let boil. Immerse the boiled eggs and cook for 2 minutes. Serve hot with chappathis, porottas/roti canai, Appam or something of your choice!
