Add 80 g of sour cream, 55g of avocado oil, 1 tsp of baking powder, 1 tsp of vanilla extract, 40g of sweetener (stevia erythritol), a pinch of salt, 30g of bamboo fiber, 8g of whole psyllium husk. Or if you have premixed bamboo baking flour, use 38g of it (30g of bamboo fiber + 8g of ground whole psyllium husk). Whisk them to combine. Heat a very lightly oiled pan over low-medium heat.  Scoop the batter onto the pan, using approximately 2 spoons for each pancake. Cook them on low-medium heat. Cover the pancakes with a lid while cooking. Flip and cook until browned on the other side. Repeat with remaining batter. The batter will become thicker after a while.
