Easy slow cooker Minestrone soup :) Cook with me

Hey guys, and a very warm welcome back to what’s for tea and I hope I find you all very well indeed :) Tonight I’m making a lovely warming minestrone soup :) I’ve been asked for more vegetarian recipes…so I’ve made this one vegetarian, but typically this would be made with pancetta or smoked bacon…so feel free to add this if you like. Same with the stock…I’m using vegetable stock but you can use whatever you fancy :) I’ve listed everything I used down below incase you want to give it a go for yourself. _________________________________________________________________ I used: 4 Garlic cloves (crushed) 2 Stalks of celery (diced) 2 Medium carrots (diced) 400g Can of cannellini beans (drained & rinsed) 2 x 400g Cans of chopped tomatoes 600ml Vegetable stock A Handful of fresh basil 50g Dried pasta 1 Small courgette (diced) 1 Medium red onion (diced) 3 Tablespoons tomato puree Salt & pepper to taste **I used some bread croutons & shaved parmesan to serve** Thanks for popping over x _________________________________________________________________ Contact me: [email protected]
