Mushroom Caviar. Great vegetable spread on a crusty bread.

This delicious mushroom spread called "caviar" in Russia due to its texture and purpose: to be enjoyed as Zakuska to go with vodka. za·kus·ka /zəˈko͞oskə/ noun A substantial Russian hors d'oeuvre item such as caviar sandwiches or vegetables with sour cream dip, all served with vodka. It is really tasty dish with tons of mushroom flavor and also great for preservation. shelf life in the refrigerator for about 6 month when preserved correctly. MUSHROOM CAVIAR You will need: 3lb(1.5kg) any mushrooms9wild mushrooms are the best) 2lb(1kg)fresh tomatoes(I used Roma) 1lb(500g)yellow onions 2lb(1kg)carrots 5 cloves garlic Spices and Condoments: 1 tsp ground coriander 1 bay leaf 2 tbsp salt 1 tbsp black pepper 3 tbsp olive oil 2 tbsp Extra Virgin Olive Oil(as a finishing taste add on) 2 tbsp white vinegar 1 bunch fresh dill METHOD: Wash mushrooms and boil for 10 minutes. Drain(but do not rinse). Let cool. Reserve 1 cup of mushroom broth. (we only might need couple table spoons) Cut Roma tomatoed in half and squeeze the seeds out. Cut into pieces and using food processor turn into a puree. Set aside. Cube onions and carrots. To a large pan add 2 tablespoons of Olive oil and heat it up. Add onions and carrots and sauté until soft(about 5-7 minutes). Take off the heat and let cool. Using meat grinder, with larger hole attachment, grind boiled mushrooms and onions and carrots, then transfer to a large pot. Add tomato puree and mix. Add ground coriander and bay leaf and 1-2 table spoons of mushroom broth. Add salt and pepper. Place on the stove top and cook on low for 1 hour. At 45 minute cooking mark add minced garlic and cook for another 15 minutes. Turn off the heat and take off the stove. Add 2 table spoons of white vinegar. (vinegar will add more taste to your caviar and also will serve as a preservative) Season more with salt and pepper if under seasoned. At the end: add 2 tablespoons of Extra Virgin Olive Oil and fresh dill. Mix and let cool slightly. wash jars with soap and hot water and dry well. Place your mushroom caviar into jars, close lids and turn them up side down. Refrigerate. Enjoy on a piece of crusty bread or Russian black bread. Enjoy! Thank you for watching!
