Timeline: 0:00 Intro 1:23 How to choose lauki for Kofta 2:35 How to sweat lauki to make Kofta 3:35 How to remove excess moisture from lauki 4:40 How to make Kofta 6:45 How to check temperature of oil for frying 7:10 Frying Kofta balls 8:00 How to make gravy for Kofta 12:00 Serving Kofta curry Recipe : Lauki Kofta Curry Preparation Time: 20 minutes Cooking Time: 25 minutes Serves: 3-4 Ingredients: For the Kofta 500 grams lauki/ doodhi/ ghia (Bottle Gourd) 1 tsp salt ½ tsp red chilli powder 1 tsp coriander powder ½ tsp kasuri methi ¼ tsp carom seeds ½ cup besan For the curry: 2 tomatoes 2 onions 2” ginger 6-7 garlic cloves ½ tsp turmeric powder 1 tsp red chili powder 1 bay leaf 1 black cardamom 3-4 green cardamom ½ tsp pepper corns ½ Cumin seeds ½ tsp pepper corns salt to taste ½ cup tomato puree 1 tsp garam masala coriander leaves ¼ cup cream Method: Grate the lauki. Add a tsp of salt and set aside for 5 minutes. Squeeze out all the moisture from the grated lauki and reserve the water. To a bowl add the grated lauki, gram flour, red chilli powder, coriander powder, kasuri methi & mix well. Divide the mixture into 8 equal balls. Shape the koftas and roll the koftas in dry besan to coat it well. Heat 2” oil in a pan for frying koftas. Fry koftas till medium brown over medium heat and set aside. For the curry: Heat 1 tbsp oil in a pan. add the sliced onions and sauté till pink. Add the sliced ginger, crushed garlic, chopped green chillies and sauté till golden brown. Add the powdered spices, sliced tomatoes and the leftover water squeezed out from the lauki. Cook till the tomatoes are soft and pulpy. Cool the mixture and grind to a smooth paste with ½ cup water. Heat 1tbsp fresh oil. Add the cumin seeds, bay leaf, black cardamom, green cardamoms, pepper corns and allow to splutter. Add the onion tomato puree and sauté till light brown. Add tomato puree and sauté till oil oozes out over the masala. Add 1 cup water and mix well. Bring to a boil. Add the cream and mix well. Remove from heat. Place the koftas in the serving bowl. Pour hot gravy over it.
