Coconut Curry Collard Greens

Coconut Curry Collard Greens are a game changer! I'm not a huge fan of coconut but I had these at a restaurant here in Atlanta and had to recreate it because the coconut was so subtle. You didn't even know it was part of the recipe until we asked! So, this is my version of a yummy experience that has turned into a crowd favorite when I entertain. In the video I talk about the greens being slightly bitter. To balance the bitterness you can add an acid, I used apple cider vinegar. Honey is also an option but you want to use it as needed. I don't talk about it in the video but I will list it with the recipe. I would start off with about a tablespoon, simmer and taste. The greens aren't meant to be sweet unless that is your preference. If so, go for it! Ingredients: *1 bunch of collard greens, cleaned, stems removed and cut into strips. (Optional: pre-cut bag greens, if you don't mind the stems) *Canola oil as needed *5 cloves of garlic 2 tablespoons of ginger *1 diced sweet red bell pepper *1 medium yellow onion, small diced *8 sprigs of fresh thyme *2 tablespoons curry powder *1/2 tablespoon cajun seasoning *1/2 teaspoon black pepper *smoked paprika *1 cup of chicken broth (substitute vegetable broth for vegan/vegetarian option) also if you want more potlicker do an additional cup of broth *1 can of coconut milk (not the unsweetened option), the sweetness will naturally help with the bitterness of the greens *2 tablespoons of apple cider vinegar honey (optional, if the coconut milk doesn't balance the bitterness) Directions: 1. Add 2 tablespoons of oil to the pan on medium heat. 2. Add bell peppers and onions, saute until translucent. About 4 minutes. 3. Add garlic and ginger. saute for 2 minutes until fragrant. Don't let the garlic burn. 4. Add dry spices. Might need to add additional oil to coat seasonings as seen in video. Toast for 1 minute. 5. Add thyme and saute for an additional minute. 6. Add coconut milk and broth, simmer for 4 minutes to marry the flavors. 7. Add greens, reduce heat to low to medium. 8. Simmer for 40 minutes, until tender. During this time, taste and adjust your seasonings, such as adding the apple cider vinegar, or honey. Add the additional broth for your potlicker. 9. Also cook until your desired texture is reached... traditionally greens are cooked 60 minutes plus. Enjoy! As always, drop a comment, hit the bell for notification and please subscribe and share!
