These baked navy beans recipe are sweet, tender, with a smoky flavor and a creamy texture. They are made with simple few ingredients. 2 cups/379g (1-pound package) dried small white beans (or navy beans); rinsed and soaked overnight. 9/2129mL cups water ½ cup/350mL, plus 1 tablespoon/15mL molasses 1 pound/454g salt pork, cut in small cubes 4 slices of bacon cut in small pieces 1 diced large onion Salt and ground black pepper 2 tablespoons brown mustard 1 teaspoon/5mL cider vinegar 1/4 teaspoon liquid smoke (optional) 1. Soak the beans in water overnight. The water should be twice as much as the beans so they can expand twice their size. When getting ready to cook the beans, discard those beans which float on the water or look different from all the others. Rinse them well and drain. 2. Turn on the oven at 350ºF/176ºC. 3. In a large Dutch oven, fry the bacon and the salted ham together until crispy. 4. Add the onion and let it become translucent and soft. 5. Add the water. 6. Add the ½ cup molasses. 7. Add the mustard. 8. Add the liquid smoke if you are adding this ingredient. 9. Taste for salt and add salt and pepper to your taste. 10. Let it boil; then add the beans. 11. Once boiling again, turn off the stove and transfer the Dutch oven to the oven and bake for 3 ½ to 4 hours. (You can stir after the first two hours, cover, and let them finish baking.
