FULECHA/FULIA- Fried Puffed Bread

Fulecha/Fried Bread Ingredients: 2 cups all purpose flour 1 1/2 tsp salt 2 tsp sugar 1 tsp roasted cumin (coarse ground) 2 tbsp ghee or oil 3/4 cup water Method Mix dry ingredients in a bowl: flour, cumin, salt, yeast, sugar, add ghee or oil and mix well. Slowly add warm water and mix gently making into a dough. Lightly knead without any pressure. Once all combined, lightly coat the dough with ghee or oil to avoid drying of the dough. Cover the dough with clean cloth. Let dough rest in a warm place for 1 hour to allow it to proof and double in size. Yeast needs warmth to activate. Too much heat will speed up yeast activity and too much of cold air will slow it down. Once doubled in size, with a little drop of oil make small dough balls, and gently roll it out into disc shape. A small amount of oil can be spread on the rolling board to easily roll out the dough. It is essential the small balls of dough are covered to protect from drying out. Frying Fry in hot oil at medium heat. To test if oil is hot and good for frying; take a tiny piece and put into hot oil. Once it comes to the surface and floats, the rest of the rolled out dough is ready to be fried. Note: requires only one proofing. Dough to rest in warm place for 1 hour or till it doubles in size. It is a delight to have with tea, however, it is also enjoyed with goat or chicken curry.
