Iraqi Easter, Christmas and Eid Cookies (Kleecha) كليجة العراقية /اطيب كليجة العيد

Klecha or Kolchee or Kelecha are the traditional Iraqi cookies or pastries made at Christmas, Easter and Eid. They mostly come with three different fillings. Dates, coconut and walnuts. Each filling has its own shape. The one with dates filling is the most famous in the form of layers cut in the form of a rectangle. As for the coconut filling, it usually comes in round shapes with a special design on the top as a result of the mold used for it. The last one with walnut filling is half moon shaped with creases at the edges. Each of them has its own distinct and delicious taste, especially with a cup of tea. Note: This is a very small quantity, feel free to increase the amount if you like. It yields about 18 to 20 pieces of each kind of the filling. Ingredients: For the dough: 4 cup flour 1 pkg instant and fast active yeast (1/4 oz.) 1 cup melted butter (or half butter and half vegetable oil or margarine or clarified butter). I use butter always 1 cup warm milk 2 Tbsp. sugar 1-2 tsp cardamom 1 tsp black seeds (haba soda) (nigella seeds )optional 1 tsp mahlab (optional) 1 tsp salt -------------------------------------------- -Mix dry ingredients together. -Add melted butter and mix very well then add warm milk and mix again then knead the dough by hand or a machine for about 5 to 10 minutes until it becomes smooth. -Cover the dough and put it in a warm place to rise for about 1 to 2 hours. For the filling: 1 Coconut filling 2/3 cup dry coconut 1 tsp cardamom 1-2 Tbsp. sugar 1-2 Tbsp. water just to moisten the filling Mix all the ingredients together then cover and set aside. 2 Walnut filling: 2/3 cup walnut chopped very small 1 tsp cardamom 1-2 Tbsp sugar 1/2-1 Tbsp water (just to moisten the filling) Mix all the ingredients then cover and set aside. 3 Date filling: 4-8 oz date paste 1 tsp cardamom 2 Tbsp oil Heat oil in a pan then add date and cardamom and cook for about a few minutes then cool it and cover and set aside. للعجين: ٤ كوب دقيق ١ ظرف خميرة (1/4 اونص) ١ كوب زبدة ذائبة (أو نصف زبدة ونصف زيت نباتي أو سمن ) ١ كوب الحليب الدافئ ١-٢ ملعقة كبيرة من السكر ١-٢ هيل ١ ملعقة صغيرة حبة سودا اختياري ١ ملعقة صغيرة محلب (اختياري) ١ ملعقة صغيرة الملح ١ حشوة جوز الهند ٢/٣ كوب جوز الهند الجاف ١ ملعقة صغيرة الهيل ١-٢ ملعقة كبيرة من السكر ١-٢ ملعقة كبيرة الماء فقط لترطيب الحشوة تخلط جميع المكونات ثم تغطى وتضع جانبا. ٢ حشوة الجوز ٢/٣ كوب جوز مفروم صغيرة جدا ١ ملعقة صغيرة هيل ١-٢ ملعقة كبيرة من السكر ١/٢-١ ملعقة كبيرة الماء (فقط لترطيب الحشوة تخلط جميع المكونات ثم تغطى وتضع جانبا. ٣ حشوة التمر ١/٢-١ كوب عجينة تمر ١ ملعقة صغيرة الهيل ٢ ملعقة كبيرة من الزيت ثم يضاف الزيت الحار في وعاء ثم يضاف التمر والهيل ويطهى لمدة بضع دقائق ثم يبرده ويغطي ويوضع جانبا. 1 egg for egg wash. بيضة واحدة مخفوقة لمسح الكعك Steps: Preheat the oven into 400 F -When the dough is risen, divide it into three parts. Each for one filling. -Roll out one part of dough with a rolling pin into a thin layer. -Spread the date paste into a thin layer on top of the dough. -Roll the dough like a jelly roll. Then flatten the surface a little with rolling pin as much thin and wide you prefer. -Cut into 1-inch wide, and arrange in the pan which is lined up with parchment paper. -Poke with a fork in a couple places to let the steam out while baking. -Arrange on a pan. Brush top with egg wash and bake till the Kleecha are golden brown. Mine too about 20 minutes -Open another part of the dough with a rolling pin into a thin layer. -Cut into circles (2-3” diameter) using a cookie cutter or a glass. -Put 1 to 2 teaspoon of the walnut filling in the middle of the circle. -Fold circle in half-moon shape. -Crimp the edges. -Arrange on a pan. Poke with fork. Brush with egg wash and bake until golden brown. Mine too about 20 minutes -Open the last part of the dough with a rolling pin into a thin layer. -Cut into circles using a cookie cutter or a glass. -Put 1-2 small teaspoon of the coconut filling in the middle of the circle. -Close the edges together and make a small ball -Put the ball( the seem side should be up) in a wooden mold specifically made for making Kleecha or any other mold then press gently. -Flip the mold and hit it on a hard surface so the cookie come out with the a nice shape on top. -Arrange on a pan. Poke with fork. Brush with egg wash and bake until golden brown.
