Don't Forget To Subscribe For More Weekly Cooking Videos!! _________________________________________ Baked Rice and Eggplant "Tahchin" Ingredients: 3 cups long grain rice 2 large eggplants 2 eggs 3 cup yogurt 1 teaspoon saffron In a pot, soak the rice for about an hour then bring it to boil (add salt) until al dente then drain out water. Take the eggplants and slice with them with the skin on. Once cut, drizzle some salt on top. In a pan drizzle avocado oil on high heat and grill the eggplants. In a different bowl add the eggs, yogurt, and mix. In a glass cup add saffron and hot water and let it soak. Once rice is done add it to yogurt mix, then add the saffron. Then use a glass dish and spread butter all over it you will then add the rice tightly packed. Then place the grilled eggplants on top of the rest of rice. Stick in oven, bake at 400 degrees at first for about 30 minutes, then 350 degrees for another hour. How to check if it's done: check the bottom of pot, rice will be golden color.
