This combination has enough proteins and fibre. Sourness comes from adding tomatoes and tamarind and spice from home ground masala. This is always served with hot rice for a vegetarian lunch menu. My version is very simple and can add any vegetables of your choice. Enjoy !!!! Do follow me on my FB page : https://www.facebook.com/profile.php?... Recipe :- Ingredients :- Rajma white beans - 1 cup Vegetables of your choice can add. Here I have added : Radish - 1 Carrots - 1 Greens stalk - 10-12 tomatoes - 2 Shallots - 8 Garlic - 7 cloves lightly crushed Curry Leaves Tamarind extract - 1/2 cup Turmeric Powder Home ground Masala Salt to taste To Temper :- Oil - 5 tbsp. Fennel seeds - 1/2 tsp Fenugreek seeds - 1/4 tsp Bay leaf , D.Chili - 2 Masala to grind :- D.chili - 5 ( cut it and soak it in warm water for 30 mins ) Fennel Powder or seeds - 1 tsp Coriander Powder - 1/2 tsp Cuscus - 1/4 tsp Almonds - 2 Shallots - 5 B. onion - 1 small size Garlic - 4 cloves Grind the above to a paste. Pressure cook the beans until soft. Heat oil and add in the fennel seeds and fenugreek seeds with bayleaf and d.chili. Add in the shallots and crushed garlic and let it brown. Add in the tomatoes and the masala. Stir until raw taste is no more. Then add in the vegetables and stir a while before adding in the tamarind extract and the cooked beans. Add salt to taste. Let it summer until oil starts to float. Serve it hot with steamed trice. Enjoy !!!! Do share your feedback
