Hi Supermoms, Vegetable Biryani is an all time favourite dish at home. Until a few years ago, Sundays were synonymous with Biryani 😎 served with a tasty onion raita. Raghu is  happy when I cook Biryani . He loves my signature Pressure Cooker Biryani the most and always chides me if I try any experimentation with it 😉. Today I am sharing this signature Quick , Easy, Super Delicious Vegetable Biryani that I make in a pressure cooker. Less preparation and cooking time but maximum taste -The best of both worlds , right? A great dish to treat your guests and also to carry for your office pot luck lunches or get together with friends. Tried and tested over two decades, and taste approved by friends and family, I proudly present my Vegetable Biryani in Pressure Cooker Recipe. Masterchefmom’s Vegetable Biryani In Pressure Cooker Recipe: Ingredients : 2 cups basmati rice 2-3 tablespoons ghee 1 tablespoon sesame oil Salt to taste Whole spices : 1-2 bay leaf 1/4 teaspoon stone flower/kalpasi 1 badi elaichi/ black cardamom 1 star anise To coarsely powder: 1/4 teaspoon fennel seeds 1-2 green cardamom 1/2” cinnamon piece 4 black peppercorns 1-2 cloves Small piece nutmeg 1/8 teaspoon cumin seeds/jeera To grind : 1 onion ( roughly chopped) 10 garlic pods 1” ginger ( chopped) 2 -3 green chillies Vegetables : 1 potato (chopped) 10-15 beans( chopped) 1 carrot(chopped) 1/4 cup green peas 1 large thinly sliced ( use half for garnish) Other Ingredients: 2 tablespoon curd 1/4 teaspoon Kashmiri Chilli Powder 1/8 teaspoon turmeric powder 1/4 teaspoon garam masala 1/4 cup mint leaves ( finely chopped) 1/4 cup coriander leaves ( finely chopped) 1/4 cup cashew nuts Pinch of sugar Method : 1. Soak rice in water for 15 minutes. 2. Coarsely powder fennel seeds, green cardamom, jeera, black pepper, cinnamon, cloves, nutmeg 3. Add ghee, fry cashew nuts 4. Heat cooker with ghee and oil. 5. Add the bay leaf, star anise, stone flower 6. Add the sliced onions, pinch of sugar and salt. 7. Once the onions fry well, remove. Add some for garnish. Add 1 green chilli halved) ( optional step). 8. Add the ingredients given “To grind” in a food processor/mixer . 9. Add it to the fried onions and continue to cook till the raw smell escapes. 10. Add turmeric powder ,chilli powder and garam masala. 11. Add curd and continue to cook over low flame. 12. Once oil separates, add the vegetables. 13. Let the vegetables cook in the masala for a few minutes. 14. Add half of the mint and coriander leaves. 15. Add the soaked rice with water. 16. Add salt. 17. Sprinkle some more mint leaves, a teaspoon of ghee and pressure cook unto 1-2 whistles. 18. Switch off. 19. Once the pressure releases, Add the cashew nuts, onions and the remaining coriander and mint leaves. Mix and serve with raita. I served it with a delicious onion raita. Simply yum!
