OLD FASHIONED COCONUT PIE with MERINGUE

Old Fashioned Coconut Pie with Meringue 1 cup plus 2 tablespoons Sugar 2 Tablespoons Flour 1 Tablespoon Corn Starch 2 cups Milk Pinch of Salt 3 Egg Yolks, beaten 1 tablespoon Butter 1 Teaspoon Vanilla Extract 1 cup Sweetened Coconut Flakes In a saucepan whisk together the sugar, flour, corn starch and salt. Add milk and stir together. Begin heating for a minute or two until warm. Remove from heat and add egg yolks. Stir in really well and return to heat. Cook on medium heat continuously stirring until thickened. Usually takes about 3 to 5 minutes. Remove from heat and add butter, vanilla extract and coconut. Stir together well and pour into cooled crust. Let cool while making the meringue. Meringue Recipe: 3 to 4 Egg Whites 1/4 teaspoon Cream of Tartar 6 tablespoons Powdered Sugar 1/4 cup Sweetened Coconut Flakes plus more for sprinkling on top Beat egg whites and cream of tartar together with an electric mixer until foamy. Continue beating while adding the powdered sugar. Keep mixing until glossy and stiff peaks have formed. Fold in Vanilla and Coconut. Dollip on top of the pie and spread to cover the custard all the way to the crust. Using a knife or spatula make peaks across the pie that the oven will brown. Sprinkle extra coconut on top. Slide into a 400 degree F Oven and bake until the peaks are toasted. Refrigerate until ready to serve.
