Watch How to make #MasalaDosa Recipe Exclusive on #TeluguRuchi The king of all dosa hails from the southern historic city of udupi near coastal karnataka.This dosa is said to be originated in this city in a popular eat out place called “Mitra Samaj” and has potato stuffing(masala) in and also smeared with a spicy red chilli and garlic chutney. Here is how we make this dosa in its most authentic way. INGREDIENTS [for 2-3 persons] 1.RICE - 100g 2.PARBOILED RICE - 50g 3.URAD DAL - 50g 4.METHI SEEDS - 1 tbsp 5.CHANA DAL - 2 tbsp 6.PRESSED RICE - 50g 7.WATER AS REQUIRED 8.INGREDIENTS FOR POTATO MASALA:- 9.OIL - 1 tbsp 10.MUSTARD - 5g 11.URAD DAL - 5g 12.CHANA DAL - 5g 13.CURRY LEAVES - 1 spring 14.GINGER - 5g 15.CHOPPED GREEN CHILLI 16.ONIONS - 50g 17.SALT AS TASTED 18.TURMERIC POWDER - 1 pinch 19.BOILED GREEN PIECES - 50g 20.BOILED POTATO - 150g 21.LIME JUICE 22.CORIANDER LEAVES METHOD:- 1.In a bowl add rice, parboiled rice, urad dal, methi seeds, chana dal, pressed rice, some water and mix it well. Soak 2-3 hours and grind into a smooth batter and ferment it into 6-7 hours. 2.For making potato masala, take a kadai and add oil, mustard, urad dal, chana dal and mix it well, again add curry leaves, ginger, chopped green chilli, onions and mix it well. 3.Now add salt as tasted, tumeric powder and mix it, again add boiled green pieces,boiled potatoes by smashing and mix it well. 4.Now add lime juice, coriander leaves and mix it well. 5.Take the masala curry in a bowl and keep it aside. 6.On a hot griddle sprinkle water and wipe and pour the batter and spread it thin, put chilli & garlic chutney and spread it, top up with some oil, put potato masala curry on dosa and cook it and fold 7.Masala dosa tastes very well with coconut chutney, sambar, and of course the potato masala.
