(please note these are affiliate links, which helps support my channel - if you decide to purchase, you don't pay any extra) ☆☆☆☆☆☆☆☆☆☆☆☆ Ingredients: FOUR ingredient CAKE (made 2) 3 large eggs (direct from the fridge) 195g/1 cup granulated sugar zest and juice of 1 lemon 128g/1 cup) plain or all purpose flour In a large bowl, add eggs and sugar. Beat on highest setting of electric whisk for 10 mins(recommended as hand whisking would be ardous!) or until mixture becomes very thick and turns a very pale yellow and more than triples in volume. Once you stop beating, it should slightly deflate - this is normal. Slowly sift flour, gently folding in until fully combined - do not add all at once. Once fully combined, add lemon juice/zest bit by bit, gently mixing in each time. Divide between 2 pre-prepared tins, preheat AF for a few mins. BAKE setting 160c/320f for approx 30 + mins or until cooked at 98c internal temp/clear toothpick (oven 180c/350f 30-35mins) Leave to cool for a few hours, the top will be quite fragile, almost merinque like in its cracklyness. Personally, I am not a fan of the ‘no butter’ cake but am glad I gave it a go!
