দিল্লির একজন সেফের হাতের স্পেশাল রেসিপি মোগলাই পরোটা মাথা নষ্ট স্বাদ || Mughlai Paratha.

Mughlai Paratha is a delicious stuffed flatbread dish popular in the Mughlai cuisine of the Indian subcontinent. It's typically filled with a spicy minced meat mixture or sometimes with vegetables and paneer (Indian cottage cheese). Here's a basic recipe for Mughlai Paratha: Ingredients: For the Dough: 2 cups of whole wheat flour Water, as needed Salt, to taste 1 tablespoon oil For the Filling: 250 grams minced meat (chicken, mutton, or beef) 1 onion, finely chopped 2 green chilies, finely chopped 1 tablespoon ginger-garlic paste 1 teaspoon red chili powder 1 teaspoon garam masala Salt, to taste Fresh coriander leaves, chopped Oil, for frying Instructions: 1. Prepare the Dough: In a mixing bowl, combine the whole wheat flour, salt, and oil. Gradually add water and knead to form a smooth, soft dough. Cover it and let it rest for about 15-20 minutes. 2. Prepare the Filling: Heat some oil in a pan. Add chopped onions and sauté until they turn golden brown. Add ginger-garlic paste and green chilies. Sauté for a minute. Add minced meat, red chili powder, garam masala, and salt. Cook until the meat is tender and cooked through. Once the meat is cooked, add fresh coriander leaves. Mix well and remove from heat. Let the filling cool down. 3. Assemble and Cook: Divide the dough into equal-sized balls. Roll out each ball into a small disc. Place a portion of the filling in the center of the disc. Fold the edges of the disc over the filling, covering it completely, and seal the edges. Gently flatten the stuffed dough ball and roll it out into a paratha. Heat a griddle or a frying pan over medium heat. Place the rolled paratha on the heated griddle. Cook on both sides, applying oil or ghee until golden brown spots appear. Remove from heat and serve hot with yogurt, pickle, or any chutney of your choice. Enjoy your delicious Mughlai Paratha! You can adjust the spices and filling ingredients according to your taste preferences.
