Raspberry Peach Galette Recipe: Crust: 1 1/4 cups all purpose flour 1 tablespoon granulated sugar 1/2 teaspoon salt 1/2 cup unsalted cold butter 3 tablespoons cold water 1 egg (for egg wash) Filling: 2- 3 peaches, pitted and cut in slices 1/2 cup raspberries (optional) 1/3 cup granulated sugar 1 tablespoon flour 1/2 teaspoon vanilla extract Instructions: 1. For the crust, mix flour, sugar, and salt 2. Then add cold butter (cut in small cubes) 3. Use pastry cutter or food processor to combine butter with flour mixture 4. Drizzle cold water on top and continue to combine until dough forms into ball. (if dough is too dry and isn't coming together, add another tablespoon of water to moisten) 5. Place in fridge to chill for about 30 minutes 6. For the filling, combine sliced peaches and raspberries. 7. Add sugar, flour and vanilla and mix with fruit. 8. Once the dough is chilled, roll out onto floured surface. Roll into an approximately 12 inch circle. Place on baking tray with parchment paper. 9. Place peach mixture in the center on the circle and fold in edges toward the center. 10. Whisk one egg and brush over the edge of the crust. 11. Sprinkle sugar on the edge of the crust. 12. Bake for about 30-40 minutes at 375 degrees Fahrenheit. Center filling should be bubbling and crust should be golden brown. 13. Serve with vanilla ice cream I hope you enjoy this recipe! :)
