#懷舊美食 #茶樓點心 #菲林卷 #芝麻卷 ▶ 訂閱我的頻道 取得最新食譜 Subscribe my channel, get the latest recipes ◀ ‣‣    / @teabreakcuisine   ▬▬▬▬▬▬▬▬▬▬▬▬▬▬▬▬▬▬▬▬▬▬ 芝麻卷,別名叫「菲林卷」,因其外型由一塊皮卷起來與菲林很相似,是七八十年代茶樓常見的點心,滿載了不少香港人的集體回憶。可惜因為它賣不起好價錢又花功夫,近年已經很少地方可以吃到,但是它在琳瑯滿目的中式點心中,卻是一道無法取代的清甜又清爽的甜品,現在一起試試做吧! Sesame rolls, also known as "film rolls", since they are similar to film rolls that rolled up from a piece of skin. They were popular dim sum in the 1970s and 1980s’ teahouses in Hong Kong, which full of collective memories of many Hong Kong people. It can't be sold at a good price and take much time to be done, so there are only a few places to eat in recent years. However, it is a refreshing and irreplaceable dessert among the dazzling array of Chinese dim sums. Let's try it together now! 🍽份量: 3條 🧂材料: 黑芝麻 70克 馬蹄粉 85克 澄麵粉 10克 粘米粉 35克 水 500毫升 冰糖 85克 芝麻油 2茶匙 👨🏼‍🍳做法: 1) 把黑芝麻用水洗乾淨,然後瀝乾水份。 2) 把黑芝麻用白鑊炒香,備用。 3) 把水加入至鍋中,煮沸後加入冰糖,把冰糖煮溶。 4) 把炒香的芝麻放入攪拌機中,再加入冰糖水,把芝麻攪成芝麻醬。 5) 把芝麻醬過篩,把芝麻渣隔走,留起芝麻水備用。 6) 把馬蹄粉、澄麵粉和粘米粉加入芝麻水,把它們攪勻,再加芝麻油,然後過篩。 7) 在蒸盤上塗上一層食油,加入一勺黑芝麻糊,把它鋪平,用中火蒸6-8分鍾。 8) 蒸熟後,將芝麻粉皮在蒸盤上捲成條狀,然後切成數段,完成。 🍽Quantity: 3 pieces 🧂Ingredients: 70g Black Sesame 80g Water Chestnut Flour 10g Wheat Starch 35g Rice Flour 500ml Water 85g Crystal Sugar 2 tsp.
