Preheat the oven to 165°C/329°F. Spread the sunflower seeds on a large baking sheet lined with parchment paper. Roast the sunflower seeds for 8 to 12 minutes, or until lightly golden and have a nutty aroma. Check on the sunflower seeds frequently and stir them at least every 3-5 minutes while it's still toasting. 2. Allow to cool until it reaches room temperature. 3. Once the sunflower seeds have cooled slightly, transfer them into a food processor or blender and blend at high speed. To avoid overheating the sunflower seeds and the machine, pulse at regular intervals. You'll need some patience, so I recommend taking a break every 2-3 minutes. The longer you blend (or process), the runnier the sun-butter consistency will be. For a smooth and creamy texture, blend for 12 to 17 minutes or until very smooth. 4. Now, add desiccated coconut, maple syrup, and sea salt and process for a few minutes more to evenly incorporate it. 5. Then, blend in the cinnamon, lemon juice, and vanilla extract. 6. Finish with a hand mixer if using a blender for a creamy, buttery smoothness. Though a food processor is preferable; but, if you don't have one, you can use a blender and follow the steps in the video to make a much smoother Sun-butter. 7. Once the homemade sunflower seed butter is ready, store it in an airtight glass jar in the fridge for 7 to 10 days. It may last longer than one months and even longer if frozen. 8. Feel free to omit any of the listed ingredients, such as (cinnamon, lemon and vanilla extract).
