Filling: 1) Fresh Prawns - 150g (chop into chunks and season with 1 tsp of sugar, 1/2 pepper and 1 tsp of corn starch) - marinade time, minimum 5minutes. 2) In a pan/pot, add butter - 50g. Stir fry 1 tsp of chopped ginger, 1 tsp of chopped garlic and 100g chopped shallots. Then add: seasoned prawns (above), 1/2 tsp salt, 1 tsp pepper. Then add, 2 tbsp all purpose flour, 1 cup of milk, 50g spring onions, 80g mozzarella cheese, 20g parmesan cheese. Cook everything into a thick mixture and refrigerate for 2hours. Dough: 1) 1.5 cup water, 50g butter, 1 tsp salt, bring all to a boil and lower heat to low. Then, add 1.5 cups of all purpose flour and keep stirring until it forms the dough. 2) Dish out cooked dough and roll out to cut into desired shape/size. Assembly: Wrap filling with dough into any preferred shape, then bathe with egg wash and cover with breadcrumbs generously. Deep fry pastries over medium heat until golden brown. Serve.
