Up until this point, sake has largely ridden the wave of Japanese cuisine, but is now gradually beginning to break free of its preconceived trappings, demonstrating how it can thrive in all kinds of culinary settings, transforming the dining and drinking experience along the way. For this session, together with a lineup of innovative chefs we’ll explore just how far sake and shochu have room to grow, the balance between tradition and innovation, and how current market trends could signal a bright future for sake and shochu.
