Giveaway Live at SuttonsDaze- Here is a link to canning the mexican corn I used in the recipe-    • Easy and quick short batch canning Me...   Here is the recipe- CORNY CHICKEN CASSEROLE 1 pint of canned chicken (16 oz or two cups of cooked chicken) 1 package of yellow rice-I use Vigo but any brand works 1 jar/can of mexican corn-undrained 1 cup plus extra for top of cheddar cheese 1 stick of butter 1 can cream of chicken (or mushroom) soup Preheat oven to 350 Grease a 9x13 pan with some of the butter and melt the rest Cook the package of rice according to direction without any added oil. When rice is cooked mix all ingredients except the cheese for the top and put in casserole. Bake for 20-25 minutes until bubbly add cheese and return to oven for 5 minutes until melted and browned If you need canning lids or supplies try Forjars lids.
