Hi everyone 👋🏻 Welcome back to Kiky Cooks. In this episode I am cooking Rendang Daging aka Beef Rendang. Rendang is one of the most well known dishes not only in Indonesia but also in its neighbouring countries such as Singapore, Malaysia and Brunei Darussalam. There are different types of rendang and also different ways to cook it. Other than beef, we can also use chicken, fish or even djengkol ( https://en.m.wikipedia.org/wiki/Archi... ). So...here is the recipe : 🍴BEEF RENDANG🍴 ❤️Main Ingredients: 1 kg of low fat beef (cut into medium cubes) 2 cans of thick coconut milk 100 ml water ❤️Ingredients to make spice paste: 10 shallots 6 cloves of garlic Bird's eye chillies (use more if you like it spicy or less for less spicy) 5 big red chillies 2 cloves 1 whole nutmeg (1/2 tsp ground nutmeg) 2 candle nuts 2 cm of ginger 2 cm of tumeric 2 cm of galangal 1/4 palm sugar ❤️Other Ingredients: 2 stalks of lemongrass 1 turmeric leaf (I didn't use it as I don't have stock) 2 bay leaves 3 kaffir lime leaves 1 1/2 tsp beef broth White sugar to taste Salt to taste ❤️How To Cook : 1. Pour a can of coconut milk, water and spice paste into a wok then bring to the boil and reduce a little to simmer. 2. Add in the beef, bay leaves, kaffir lime leaves and turmeric leaves. Stir and simmer until the sauce thickens. 3. Once the sauce thickens, add in another can of coconut milk. Season with salt, white sugar also powdered beef broth or beef stock. Stir. 4. Lower the heat and simmer for about 2 hours or until the sauce thickens. Stir occasionally to prevent the beef and the sauce from burning. 5. Remove from the heat once the spice and the oil has separated. Now it's ready to be served.
