Known for its distinctive purple flesh, the Okinawan Sweet Potato is one of my favorite natural source of complex carbohydrates as well as one of the coolest looking produce! Okinawan Sweet Potatoes are rich in anthocyanins which act as an antioxidant and helps fight free-radicals, reduce inflammation and fights cancer.
