On a pot over high heat, add cooking oil and slightly fry the chicken on both sides. 2. Add the onion, garlic, and ginger, and sauté for about 30 seconds. 3. Stir in the salt and fish sauce, mixing well. 4. Add the glutinous and Jasmine rice, and stir to combine. 5. Pour in 6 cups of water. Once it comes to a boil, reduce the heat to low. 6. Simmer for about 25-35 minutes, depending on the heat level. 7. Remember to occasionally stir the soup to prevent the rice from sticking to the bottom of the pan. 8. You can adjust the consistency according to your preference, whether you want it slightly runny or creamy. 9. To serve, garnish with fried garlic, fried shallots or onions, calamansi/lime, spring onions, black pepper, boiled egg and chili garlic oil. These toppings elevate the dish from ordinary to extraordinary.
