Homestyle Lentil Loaf w/ Maple Balsamic Glaze

With the holidays right around the corner, I wanted to share one of my favorite holiday recipes from my new book "The Plant-Based-Diet for Beginners" 📖(https://amzn.to/35Yilol) 📖. This lentil loaf is the perfect recipe to get everyone together around the table to enjoy each others company and a tasty plant powered meal. Taking this recipe to new heights is my easy maple-balsamic glaze that goes on right before get the lentil loaf baking. I am so excited to share this WFPB, vegan, GF, and oil free recipe that I believe will be a hit no matter who you are making it for! For the lentil loaf 2 cups cooked brown or green lentils 1 cup quick cooking oats, uncooked 1 cup brown rice, cooked 1/4 cup vegetable broth 1/4 cup sweet & tangy ketchup 2 tablespoons nutritional yeast 2 teaspoons onion powder 1 teaspoon garlic powder 1 teaspoon dried sage 1 teaspoon dried thyme 1/2 teaspoon black pepper 1/2 teaspoon baking powder For the glaze 1 tablespoon balsamic vinegar 1 tablespoon tomato paste 1/2 teaspoon maple syrup 1. Preheat the oven to 400 F 2. In a large bowl, combine all of the lentil loaf ingredients. Mix together until the spices and oats have been thoroughly mixed and the lentils mashed. Transfer the mixture into a nonstick bread pan or a baking dish lined with parchment paper. 3. Mix together the glaze ingredients. Brush the glaze evenly over the top of the loaf before placing into the oven. 4. Bake for 30 minutes, or until lightly browned, and serve. Share and tag someone who should make this!
