MY WEBSITE: tiffanibeaston.com Recipes: Sweet Potato Cottage Pie: Sweet potato layer: Roast 3 large sweet potatoes on 400 degrees until soft (about 25 min or so depending on oven) Peel skins off and mash your sweet potatoes with some butter and small amount of milk if you want a creamy texture. Meat Layer: cook your grass fed ground beef (I did 1 lb but do however much you’d like), with 1 yellow onion and 4 garlic cloves. Add in spices (1 tbs of thyme, salt & pepper), add in 3 tbs of tomato paste, two tablespoons of worcestershire sauce, and frozen peas & carrots. Once your meat is cooked layer it in bottom of baking dish and cover with sweet potatoes and shredded cheese. Bake on 400 degrees until cheese is melted! Stuffed Acorn Squash: Cook package of ground turkey, season with salt, pepper, garlic, thyme, & sage. Cook halfed acorn squash on 400 degrees facedown on oiled baking sheet for about 20-25 minutes. Stuff your Acorn squash with the ground turkey and top with raisins and goat cheese.
