Make brine by adding water, salt, sugar 2. Brine the pork for 12 hours 3. Prepare seasoning by adding salt, brown sugar, garlic powder, onion powder, ground black pepper, dried rosemary, and dried thyme 4. Remove pork loin from brine, wash them in running water, and pat dry 5. Using yellow mustard as a binder, season the pork loin with the rubs. 6. Throw the pork loin in the smoker at 225 degrees. 7. When the internal temp reaches 120, bump the smoker temp to 450. 8. Pull out the pork loin when the internal temp reaches 145. 9. Rest for 10 minutes.. 10. Slice and serve.
