Somma Ghosh’s Homestyle Bengali Chaler Payesh For Your Festive Bhog

Chaler Paayesh is a much loved and auspicious Bengali dessert. It is traditionally prepared by families on special occasions and is a much-loved part of the Durga Pujo Bhog. Times Foodie caught up with renowned Mumbai-based home chef Somma Ghosh, who specialises in traditional Bengali cuisine to find out how she makes her signature paayesh for the celebrations. Ingredients 1 litre Full Cream Milk 400 grams Condensed Milk 50 grams Cashew Tukda 1 pinch Saffron 50 grams Gobindo Bhog Rice (or Tukda Basmati if unavailable) Method Wash the rice and set aside. In a deep vessel, pour the milk and stir at regular intervals. Bring to a boil. Reduce the heat and carefully add the rice. Stir well to prevent the rice grains from sticking to each other. When the milk begins to stick to the ladle and the rice is semi-cooked, add the cashews. Once the rice is fully cooked, add the condensed milk. Stir continuously, ensuring to scrape the bottom and sides of the vessel. When the milk thickens, and the rice is fully cooked, add the saffron. Stir well and switch off the flame. Pour into small bowls for individual servings. Garnish with fried cashews or saffron as desired. Best served chilled.
