Here's how you can make it: Ingredients: 1 cup lobia (black-eyed beans), soaked for 4-6 hours 2-3 tablespoons oil or ghee 1 large onion, finely chopped 2 tomatoes, finely chopped or pureed 2-3 green chilies, sliced 1 tablespoon ginger-garlic paste 1 teaspoon cumin seeds 1 teaspoon coriander powder 1 teaspoon red chili powder ½ teaspoon turmeric powder 1 teaspoon garam masala powder Salt, to taste Fresh coriander leaves, for garnish Lemon wedges (optional) Instructions: Cook the Lobia (Black-eyed Beans): Pressure cook the soaked lobia with water and a pinch of salt for about 10-12 minutes (or 2-3 whistles). The beans should be soft but not mushy. Drain and set aside. Prepare the Karahi Masala: Heat oil or ghee in a pan or karahi. Add cumin seeds and let them crackle. Add chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears. Add Tomatoes and Spices: Add chopped tomatoes or tomato puree to the pan. Cook until the tomatoes are soft and oil starts to separate from the masala. Add coriander powder, red chili powder, turmeric powder, and salt. Cook the masala well until everything is combined and aromatic. Combine Beans with Masala: Add the cooked lobia to the pan and mix with the masala. Add a little water (if needed) to adjust the consistency. Let it simmer for 5-10 minutes so that the beans absorb the flavors of the masala. Finishing Touch: Sprinkle garam masala and mix well. Garnish with freshly chopped coriander leaves and green chilies. Serve: Serve hot with roti, naan, or rice. You can also add lemon wedges on the side for a tangy kick.
