Sunflower oil 3 cloves of garlic 2 shallots 3 small peppers 32 oz of cannellini beans 14 oz of coconut milk 2 tbsp of red curry paste 1 tsp of garlic powder 1 tsp of onion powder 2 tsps of paprika 1 tsp of chili powder Optional for garnish Fresh parsley Directions 1. Add rice to a medium pot and cover with water. Bring to a boil and reduce to medium high heat. Cook for approximately 20 minutes, or until all excess water has evaporated. Set aside and let cool. 2. While rice is cooking, mince garlic, finely dice shallots and slice peppers. Heat a large frying pan to medium high heat and drizzle with sunflower oil. Add in vegetables and saute for 5 minutes. 3. Strain and rinse cannellini beans and add into pan. Pour in coconut milk and add in red curry paste, garlic powder, onion powder, paprika and chili powder. Mix well and cook for an additional 5 minutes. Set aside to cool. 4. When ready to serve, portion brown rice into a bowl and top with white bean curry. Sprinkle with fresh parsley and enjoy!
