Asparagus needs a strong root structure in order to handle the shoots being removed.⁠ ⁠ After 3+ years of growing, you can start to pick any shoot that is larger than the size of a lead pencil (1/4 of an inch) and about 8 inches tall. Anything smaller is coming from roots that need more strength.⁠ ⁠ Picking usually occurs 6-8 weeks from your first harvest. Once the shoots start going to seed (they start to look like ferns), stop picking so the roots can regain their strength! Leave all the growth until next spring.
