Place the eggs in a saucepan and cover with water. Bring to a boil, then reduce the heat to low and simmer for about 10 minutes. Once boiled, remove the eggs from the water, let them cool, peel, and set aside. Grind the poppy seeds with Green Chili into a fine paste using a spice grinder or mortar and pestle. Add a little water if needed to facilitate grinding. Cut the Boiled egg into two pieces and marinate them with mustard oil, turmeric powder,Red chili powder and pinch of Salt. Heat The Oil in a pan and fry the marinated Eggs properly. Heat mustard oil in a pan over medium heat. add pinch of Black seeds Or Kala Jeera and Dry red chili , Sauté for a minute until fragrant. Then Add onions and tomatoes and fry them until the tomatoes become mushy. Add turmeric powder and red chili powder to the pan. Stir well. Add the poppy seed paste to the pan and cook for a couple of minutes, stirring constantly. Pour in about 1/2 to 3/4 cup of water to make a gravy consistency. Add salt to taste and mix well. Gently add the fried eggs to the gravy, making sure they are coated well. Simmer for another 2-3 minutes, allowing the flavors to meld together. Once the gravy thickens to your desired consistency and the eggs are heated through, remove from heat. Serve hot with steamed rice. Enjoy your Bengali Dim Posto!
