This is Ecosia: https://www.ecosia.org My Instagram:   / fitgreenmind   My cookbook: https://www.make-it-maya.com RECIPES FROM THIS VIDEO: Roasted pepper pasta: -1 red pepper Roast or air fry at 200C/400F for 15mins, then peel. -1 TBSp vegan cream -pasta water -1 TBSP tomato paste -salt, pepper and herbs to taste Blend until smooth. -1 serving of pasta Cook al dente, then finish cooking it in the sauce. Serve with tempeh or tofu. Single moussaka: -1 small eggplant, cut in slices -150g potatoes, cut in slices Mix with some oil and salt. Bake or air fry at 200C/400F for 15mins. Sauce: -1 small onion -1 clove of garlic Sauté in oil. -1 TBSp tomato paste -150g tomato sauce -20g pea protein chunks -salt to taste -1 TSP Marika -1 TSP dried herbs Let that simmer for around 10mins. Layer eggplant, potatoes, sauce and some vegan cream in a small baking dish. Bake or air fry at 200C/400F for another 5mins. Quick noodle soup: -1 clove garlic -a thumsize piece of ginger -1/2 small Napa cabbage Sauté in chili oil. -1 cup (250ml) water Let that simmer for 5mins. -1 TSP miso paste -1 TSP vinegar -1 TSP soy sauce -1 TSP agave -1 TSP sriracha Stir that in and keep the soup warm on low. Tempeh crumbles: -100g tempeh -2 TSP hoisin sauce -a handful chopped cilantro Fry the tempeh in some oil, add the sauce and cilantro and toss. Serve with your favorite noodles. Burger 🍔: Self explanatory I guess 😉 Eggplant tofu curry: -30ml full fat coconut milk -1 TBSP red curry paste Reduce in a pan until the fat starts to separate from the milk -35ml coconut milk -100ml water -a pinch of sugar -salt to taste -optionally: lime leaves -1 TSP soy sauce -juice of 1/2 lime Let it simmer. -1 small eggplant, cut in chunks -1/2 block (100g) tofu, shredded Mix with salt and oil, then air fry at 180C/350F for 15mins. Add to the sauce and let it simmer for 5mins. Serve with rice. Much love Maya :)
