How to Make Doi Potol - Dahi Parwal Recipe

Doi Potol or Dahi Parwal is an Indian (Bengoli) main course vegetable dish where Potol (pointed gourd) is fried and then mixed with Yogurt (Dahi) along with some gravy. This serves well with Rotis (flat bread) or even Rice. Ingredients Required: 1) Potol (pointed gourd) 2) Mustard Oil 3) Turmeric Powder (Haldi Powder) 4) Salt to Taste 5) Onion (Cut into Large Pieces) 6) Garlic Cloves 7) Cardamom Pieces 8) Ginger (Roughly Cut into large Pieces) 9) Yogurt (Dahi) 10) Cumin Seeds (Jeera) 11) Bay leaves (Tej Patta) 12) Cumin Seeds Powder (Jeera Powder) 13) Garam Masala (Cardamom, Cumin, etc.) 14) Peri Peri Powder 15) Sugar (a pinch of Sugar) Here's the Step by step guide on How to Make #DoiPotol Step 1. Get your #Potol (pointed gourd) ready: 1) Wash and clean some Potol and cut off their top and bottom. 2) Roughly peel off their skin and with the help of a knife, clean the left over skin. 3) Then, with the help of a knife make deep cuts on the Potol. 4) Take a frying pan and heat oil in it. 5) While the oil is getting heated, take the Potol and mix one tea spoon of Haldi (Turmeric Powder) and salt to taste. 6) Once the Oil is hot, add the Potol into it and fry it well. Close the Lid and let it cook for some time. Step 2. Make the Doi Potol #Gravy 1) Take one large onion and cut it into several pieces. Put it in a mixer grinder. 2) Add 10+ Garlic Cloves to it. Make sure to peel of the skin of the garlic before adding. 3) Roughly skin some Ginger pieces and put it in the same mixer. 4) Take 2 pieces of Cardamom and put it in the mixer. Run the mixer and make a paste. In the meantime, do open the Lid and turn the potol pieces over so that their other side gets cooked too. Then close the lid and let it cook for some more time. Step 3. Make the Doi (Dahi) ready. 1) Mix 2 and a half tea spoon of Yogurt (Dahi) with Turmeric powder (Haldi Powder). We are using the left over Turmeric powder that we had applied on the Potol earlier. 2) Stir it constantly and mix it well. Then keep it aside for later. In the meantime, open the Lid and check if the #FriedPotol is ready. Take it off the flame. Step 4. Make the Doi Potol Gravy 1) In the same frying pan, add some Jeera (Cumin Seeds) and fry it. 2) Next, add Bay Leaves (Tej Patta) into it. 3) Then add the contents of the mixer into it. Keep stirring it. 4) Then add one Tea Spoon of Jeera Powder (Cumin Seeds Powder) into it. 5) Next, add one Tea Spoon of Haldi Powder (Turmeric Powder) into it. 6) Next, add one Tea Spoon of Garam Masala (coriander, cumin etc.) into it. 7) Add a pinch of Peri Peri powder (Optional) 8) Add a pinch of Sugar into it (Optional but Recomended) 9) Add salt as per taste. Do note that you have already added salt to the Potol, so mix accordingly. 10) Add the Yogurt (Dahi) and Turmeric powder mixture that we had created earlier into the gravy. 11) Add the fried potol into the gravy. Mix it a bit so that the gravy enters the potol.
