Говяжья грудинка карри

🟢材料: 牛肋條/牛腩 900 克 馬鈴薯 2 個 洋蔥 1 個 蒜頭 4 瓣 紅蔥頭 4 粒 薑 5 片 辣椒 3 隻 陳皮 3 克 月桂葉 2 片 八角 2 粒 桂皮 少許 冰糖 25 克 柱侯醬 1 湯匙 咖哩醬 3 湯匙 椰漿 65 毫升 全脂淡奶 3 湯匙 黃薑粉 1 湯匙 🟢做法: 1️⃣ 牛肋條解凍後,汆水 5 分鐘,洗淨晾乾水。 2️⃣ 熱鑊下油把牛肋條爆香,然後加入蒜頭、蔥頭、薑、陳皮和香料炒香,加入柱侯醬、老抽、冰糖翻炒至醬香,灒入紹興酒,加入熱水浸過牛肋條,小火炆煮 1 小時。關火後等待半小時後才開蓋。 3️⃣ 馬鈴薯切成塊,用油炸至金黃,洋蔥切成小塊炒軟炒香,備用。 4️⃣ 取出牛肋條,隔渣,汁留用。 5️⃣ 爆香蒜蓉和蔥頭蓉,轉小火把加入了黃薑粉的咖哩醬爆炒,炒至醬香,加入牛肋條翻炒。 6️⃣ 加入之前炆牛肋條的湯汁,加入馬鈴薯、辣椒炆煮 5~10 分鐘。 7️⃣ 加入洋蔥煮 1 分鐘,關火加入椰漿及淡奶,拌勻即可上碟。 🟢Ingredients: Beef ribs/beef brisket - 900g Potatoes - 2 Onion - 1 Garlic - 4 cloves Shallots - 4 Ginger - 5 slices Chili peppers - 3 Dried tangerine peel - 3g Bay leaves - 2 Star anise - 2 Cinnamon - a small piece Rock sugar - 25g Chu Hou sauce - 1 tablespoon Curry paste - 3 tablespoons Coconut milk - 65ml Full-fat evaporated milk - 3 tablespoons Turmeric powder - 1 tablespoon 🟢Cooking Directions: 1️⃣ Thaw the beef ribs and blanch them for 5 minutes. Rinse them and pat dry. 2️⃣ Heat the wok with oil and stir-fry the beef ribs until fragrant. Then add garlic, shallots, ginger, dried tangerine peel, and spices to stir-fry until fragrant. Add Chu Hou paste, soy sauce, rock sugar and stir-fry until the aroma comes out. Sprinkle Shaoxing wine and add enough hot water to cover the beef ribs. Stew on low heat for 1 hour. Turn off the heat and wait for half an hour before uncovering. 3️⃣ Cut the potatoes into pieces and fry them until golden brown. Cut the onion into pieces and stir-fry until soft and fragrant. Set aside. 4️⃣ Take out the beef ribs and strain the broth for later use. 5️⃣ Sauté fragrant minced garlic and shallots in a wok until fragrant. Reduce the heat to low and add curry paste with turmeric powder, continuing to stir-fry until the aroma is released. Add beef ribs and stir-fry. 6️⃣ Add the broth from step 4, add the potatoes, chili peppers and stew for 5-10 minutes. 7️⃣ Add the onion and cook for 1 minute. Turn off the heat and add the coconut milk and evaporated milk.
