Mastering and normalizing are two different things. Normalizing is great for a quick bounce to listen back to what you recorded. It also serves the purpose of releasing quick content at a volume level that will satisfy your audience. When you originally record audio on any microphone, the volume will be quiet from the start (if you are doing it properly). How do we make this louder? Mastering is a more complex process involving taking an already well-mixed project that is somewhat loud and making it clearer and louder. You also use plugins or hardware to add character sonically. At the end of adding enhancements, you add a limiter which will bring up the volume in terms of RMS/True Peak and LUFS (perceived loudness). Nowadays the most important thing to do is get the LUFS up to a suitable level for streaming platforms such as Apple Music and Spotify.
